01Method

  1. 1

Using an electric mixer, cream together 2 cups of the sugar and the softened butter in a large bowl until smooth and fluffy. Mix in the eggs and vanilla extract until fully combined.

  2. 2

In a separate bowl, sift together the flour, pumpkin pie spice, baking powder, and salt. Gradually add the flour mixture to the butter mixture, beating until no dry flour remains. Cover the dough and refrigerate for at least 1 hour until chilled.

  3. 3

Heat the oven to 375°F (190°C) and coat baking sheets with cooking spray.

  4. 4

Place the remaining sugar in a shallow dish. Set a small bowl of water nearby.

  5. 5

Scoop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Dip the bottom of a glass in water, then press it into the sugar. Use the sugared glass to gently press each ball of dough flat, re-dipping in water and sugar as needed.

  6. 6

Bake in the preheated oven for 5 to 7 minutes, until the cookies are just set.
