- 1
Using two knives or a pastry cutter, work the butter into the flour until the texture resembles coarse crumbs. Stir in the sour cream and egg yolk until fully incorporated. Form the dough into a ball, wrap it tightly, and chill in the refrigerator for at least 8 hours or overnight.
- 2
In a small bowl, stir together the walnuts, sugar, and cinnamon until evenly combined.
- 3
Heat the oven to 350°F (175°C) and lightly grease two baking sheets.
- 4
Divide the chilled dough into 4 equal portions. On a lightly floured surface, roll each portion out to about 1/8-inch thickness. Distribute one quarter of the walnut filling evenly over each circle, then use a pizza wheel to cut each circle into 12 triangular wedges.
- 5
Starting from the wide end of each wedge, roll the dough toward the point to form a crescent shape. Place the shaped cookies onto the prepared baking sheets.
- 6
Bake until the cookies turn golden, approximately 20 to 25 minutes. Keep a close eye on them during baking, as the bottoms tend to brown more quickly than the tops.
