01Method

  1. 1

Whisk together the eggs and most of the sugar in a stand mixer until combined, then incorporate the salt and a portion of the oil. In a separate bowl, toss the almonds with a small amount of flour until evenly coated.

  2. 2

Gradually alternate adding the remaining flour mixture and the rest of the oil into the egg mixture, starting and finishing with the dry ingredients. Fold in both extracts and the flour-coated almonds.

  3. 3

Divide the dough into eight equal portions and form each into a log roughly 8 by 3 inches on lightly greased baking sheets.

  4. 4

Bake in an oven preheated to 350°F (175°C) for 25 minutes, or until the logs turn light golden.

  5. 5

Slice each log on the diagonal into ½-inch pieces, lay them cut-side down on the baking sheet, and return to the oven at 350°F (175°C) for approximately 5 minutes. Transfer to wire racks to cool completely. Optionally dust with sugar before the second bake.
