01Method

  1. 1

Set the oven to 350°F (175°C) and line two large baking sheets with parchment paper.

  2. 2

Place a dry skillet over medium heat and toast the pine nuts, stirring frequently, until golden and aromatic, about 5 minutes.

  3. 3

Using an electric mixer, cream together the butter and white sugar in a large bowl until light and smooth. Add the eggs one at a time, mixing thoroughly between each addition. In a separate bowl, combine the flour and baking powder, then fold this mixture into the butter base until a dough just comes together. Stir the toasted pine nuts into the dough.

  4. 4

Pour the corn flakes into a shallow dish. Scoop the dough into balls roughly the size of one tablespoon each, then roll each ball through the corn flakes, pressing lightly so they adhere. Place the coated balls on the prepared baking sheets about 1 inch apart.

  5. 5

Bake until the cookies turn golden brown, approximately 23 minutes. Allow them to cool on the baking sheets, then sift confectioners' sugar over the tops before serving.
