01Method

  1. 1

Beat the softened butter with powdered and vanilla sugars until light and creamy, then fold in the egg yolk, lemon zest, and ground almonds, finishing with the sifted flour.

  2. 2

Knead the mixture into a smooth dough, wrap in plastic, and refrigerate for at least one hour until firm.

  3. 3

Roll the chilled dough into a log about 3 cm in diameter, cut into 20 equal pieces, and shape each into a ball.

  4. 4

Use the handle of a wooden spoon to create a small indent in the center of each ball for filling.

  5. 5

Brush the cookies with beaten egg, sprinkle with almond slivers, and bake in a preheated oven at 180°C for about 17 minutes until golden.

  6. 6

Remove from the oven and spoon a small amount of jam into each indent while still warm, then allow to cool completely.

  7. 7

Before serving, dust lightly with powdered sugar if desired.
