01Method

  1. 1

Heat the oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper or coating it with cooking spray.

  2. 2

In a large bowl, beat the peanut butter, honey, and brown sugar together with an electric mixer until smooth and creamy. Mix in the Greek yogurt, egg, and vanilla extract. Fold in the whole wheat flour, baking soda, and salt until a uniform dough forms. Chill the dough in the refrigerator for 20 minutes.

  3. 3

Portion the chilled dough into tablespoon-sized pieces and roll each into a ball. Arrange the balls on the prepared baking sheet with about 2 inches of space between them. Flatten each ball using a fork, pressing a criss-cross pattern into the top.

  4. 4

Bake until the edges are set and beginning to turn golden brown, 8 to 10 minutes.
