01Method
- 1
**Make the syrup:** Combine the brown sugar and hot water in a small saucepan and stir until the sugar has completely dissolved.
- 2
**Cook the tapioca pearls:** Bring a pot of water to a boil and cook the tapioca pearls according to the package instructions. Once cooked, drain and briefly rinse under cold water to stop the cooking. Drain again and transfer to a bowl with the syrup, letting them soak while you prepare the tea.
- 3
**Brew the tea:** Pour boiling water into a glass or pitcher, add the tea leaves or bags, and steep for 10 minutes to make a strong brew. Strain through a fine mesh sieve or coffee filter (or simply remove the bags).
- 4
Spoon the tapioca pearls along with some syrup into each serving glass. Pour in some of the black tea, then top up with milk to taste.
- 5
Give everything a good stir before drinking. Adjust the ratio of pearls, tea, and milk to your liking.
- 6
Serve hot, at room temperature, or over ice as a cold drink.
