01Method

  1. 1

Gather and prep all ingredients before starting.

  2. 2

In an extra-large tall-sided skillet over medium heat, brown the ground beef together with the onion, bell pepper, and garlic, breaking up the meat as it cooks, until no pink remains and the vegetables have softened, about 8 minutes. Drain off excess fat.

  3. 3

Add the rice, salt, and cumin to the skillet. Stir and cook for 1 minute.

  4. 4

Add the tomato paste and stir continuously for another minute.

  5. 5

Pour in the undrained diced tomatoes, broth, green chiles, and Worcestershire sauce. Bring the mixture to a boil, then reduce the heat, cover, and simmer until the rice is tender and the liquid is mostly absorbed, about 20 minutes.

  6. 6

Take the skillet off the heat, scatter the cheese over the top, replace the lid, and let it stand until the cheese has melted, about 5 minutes.

  7. 7

Finish with a scattering of green onion or cilantro before serving.
