01Method

  1. 1

Gently melt the chopped chocolate using a double boiler or microwave, stirring until completely smooth. In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt; set aside.

  2. 2

Beat the butter together with both sugars until creamy and well combined. Add the eggs one at a time, mixing after each addition. Stir in the coffee granules and vanilla extract, then fold in the melted chocolate. Using a wooden spoon, incorporate the dry ingredients until just combined. Cover the bowl and allow the dough to rest for 35 minutes so the chocolate firms up.

  3. 3

Heat the oven to 350°F (175°C) and line two baking sheets with parchment paper.

  4. 4

Shape the dough into walnut-sized balls or drop rounded spoonfuls onto the prepared sheets, spacing them about 2 inches apart.

  5. 5

Bake for 8 to 10 minutes. The cookies will appear set around the edges but the centers will remain very soft due to the chocolate content. Leave them on the baking sheets for 10 minutes before moving to a wire rack to finish cooling.
