01Method

  1. 1

Combine cranberries, white sugar, and water in a saucepan and bring to a boil over medium heat, stirring often. Lower the heat and cook, stirring and breaking down the cranberries, until the mixture is very thick, about 15 minutes. Allow to cool fully, around 30 minutes.

  2. 2

Heat the oven to 350°F. Line an 8-inch square baking pan with foil on the bottom and all sides, then coat with cooking spray.

  3. 3

Place the flour, oats, nuts, brown sugar, baking powder, salt, cinnamon, and nutmeg in a food processor and pulse three times to combine. Add the butter and continue pulsing until the mixture starts to clump together. Press half the mixture firmly and evenly into the base of the prepared pan. Spread the cranberry jam over the top, then distribute the remaining dough evenly over the jam and press gently to level.

  4. 4

Bake until the top is golden brown, 45 to 50 minutes. Let cool completely in the pan on a wire rack. Use the foil to lift the slab out of the pan, then slice into bars.
