01Method

  1. 1

Set the oven to 325°F (165°C) to preheat.

  2. 2

In a mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set the dry mixture aside.

  3. 3

Place the butter and chocolate chips in a microwave-safe bowl and melt in 30-second bursts, stirring between each, until smooth. Beat in the eggs one at a time, ensuring each is fully combined. Stir in both sugars and the vanilla until well incorporated. Gently fold in the dry ingredients until no streaks remain, then fold in the chocolate chunks.

  4. 4

Scoop rounded teaspoonfuls of dough onto a baking stone or lined cookie sheets and finish each with a pinch of fleur de sel on top.

  5. 5

Bake until the cookies have spread and the edges are set but the centers still appear slightly underdone, 10 to 14 minutes. Remove from the oven and let cool on wire racks.
