01Method

  1. 1

Heat the oven to 375°F (190°C). Prepare four 8×8-inch baking pans by greasing and dusting them with flour.

  2. 2

Melt the chocolate chips together with the coffee granules in a double boiler set over gently simmering water, stirring from time to time until the mixture is completely smooth. Remove from heat and let cool slightly.

  3. 3

In a large mixing bowl, beat the butter with the sugar until pale and fluffy. Add the eggs two at a time, beating well between each addition. Mix in the vanilla, cinnamon, and salt, then fold in the melted chocolate mixture. Stir in the flour until just incorporated. Distribute the batter evenly among the four prepared pans and smooth the tops.

  4. 4

Bake for 35 minutes, or until the edges begin to pull away from the pan sides. Transfer to a wire rack to cool completely, then cover and refrigerate for 8 hours. Slice the chilled brownies into bars before serving.
