01Method

  1. 1

Combine water and rice in a saucepan and bring to a boil. Lower the heat, cover, and let simmer until the rice is fully cooked and all liquid is absorbed, 20 to 25 minutes.

  2. 2

Arrange bacon strips in a large skillet and fry over medium-high heat, turning occasionally, until evenly crispy, about 10 minutes. Move the bacon to a paper towel-lined plate, let it cool, then crumble into small pieces. Leave the rendered fat in the skillet.

  3. 3

In the same skillet over medium heat, scramble the eggs until just barely set, 1 to 3 minutes. Add the yellow onion, peas, green onions, and a portion of the soy sauce; stir-fry until the onion softens and becomes translucent, about 5 minutes. Reduce the heat to low, then fold in the cooked rice, crumbled bacon, and remaining soy sauce, stirring until everything is evenly combined and warmed through, 1 to 3 minutes.
