Heat the oven to 325°F. Coat a 13x18-inch rimmed half-sheet pan with nonstick spray and lay a sheet of parchment paper across the bottom.
- 2
In a large bowl, use a fork to mash the bananas until nearly smooth. Whisk in the sugar and melted butter. Add the baking soda and salt and whisk vigorously for about 30 seconds until fully blended. Stir in the sour cream, eggs, and vanilla. Fold the flour in gently with a spatula just until no dry streaks remain.

Scrape the batter into the prepared pan and smooth it into an even layer. Bake for about 20 minutes, rotating the pan at the halfway point, until the surface is lightly golden and a toothpick inserted in the center comes out clean. Move the pan to a wire rack and allow to cool completely, about 30 minutes.

Once fully cooled, spread the frosting in an even layer over the bars. If desired, scatter the toasted pecans or walnuts on top. Slice into individual bars, cleaning the knife between cuts as needed, and serve. Store any leftovers covered in the refrigerator for up to 3 days.
