01Method
- 1
Whisk together flour, half a cup of confectioners' sugar, cornstarch, and salt in a mixing bowl until combined.
- 2
Using an electric mixer, beat the butter in a separate bowl until light and fluffy, then incorporate the white sugar and vanilla extract until smooth.
- 3
Gradually fold the dry mixture into the butter mixture in three additions, mixing just until a dough forms. Split the dough into two equal portions, shape each into a cylinder, and chill in the refrigerator until firm, about 2 hours.
- 4
Heat the oven to 350°F (175°C).
- 5
Cut each chilled dough log into 24 rounds about 1/4-inch thick and arrange them on ungreased baking sheets.
- 6
Bake until the edges begin to turn lightly golden, 8 to 10 minutes.
- 7
Allow the cookies to rest on the baking sheet for 1 minute before transferring them to a wire rack to cool completely, 25 to 30 minutes.
- 8
Spread a generous layer of dulce de leche on half of the cooled cookies using a knife, then press the remaining cookies on top to form sandwiches and arrange on a serving platter.
- 9
Finish by lightly sifting confectioners' sugar over the assembled cookies.
