01Method
- 1
Set your oven to 180°C (or 160°C for convection).
- 2
Crush the biscuits finely and mix with the melted butter until well combined.
- 3
Line a 20 cm springform cake pan with parchment paper and press the biscuit mixture evenly across the bottom using the back of a spoon.
- 4
Place the quark in a food processor with the lemon zest and juice, sugar, egg yolks, and semolina; blend for approximately 2 minutes until smooth and fully incorporated.
- 5
Pour the filling into the prepared crust and bake for 35–45 minutes until the filling is set to the touch and begins to pull away slightly from the pan sides.
- 6
Turn off the oven, crack the door open, and allow the cake to cool in the oven for about an hour.
- 7
While cooling, hull and cut the strawberries into quarters or eighths as desired. Warm the jam with a little water, strain it through a fine sieve into a bowl, and coat the strawberries in the mixture.
- 8
Run a knife around the inside of the pan, release and remove the springform ring, transfer the cake to a serving plate, and finish with the glazed strawberries on top.
